Multi-Color Cupcakes

I love the 4th of July!! We have been going to parade and fireworks since I was a kid!! But I also like seeing all the patriotic desserts!!

This year I made Red White and Blue cupcakes!!

You can use any white cake recipe, I used my Fluffy Vanilla Bean recipe.

After the batter is complete, split it into equal parts. Since I was doing three colors, I split mine into 3 equal parts. The batter did not need to be dyed for the White, so I just set that aside. I used gel food coloring for the others. Gel food coloring seems to work best because it gives you more vibrant colors!

You will want to layer the colored batter into the cupcake liners. I use a small cookie scoop.

It will take a total of 4 scoops, so I do one of each color. For the last scoop, I do 1/3 of the cupcakes with each color, to try and even things out. I also like to take a toothpick to mix things up a bit. Just be careful not to mix them too much, it will become an unattractive color.

Bake the cupcakes as normal.

If you would like, you can finish them off with a white frosting. I wanted to go all out, so I swirled the frosting. You can see my instructions on how to do that here.
