This has to be my most popular recipe! I have been making it since I was old enough to chop up the vegetables!!

My family loves it SO much, my sister requests it as a birthday present!!

All the vegetables used are fresh, this really makes the flavor pop!! And perfect for your summer barbecue!

Plus, I LOVE the mix of color. I’ve made this recipe so many times, I never knew exactly how much of each ingredient that I used. So when family would ask me how to make it, I would always give them the ingredients, with approximate amounts, and tell them they know they have it right based on the mix of colors.

Obviously, that isn’t an exact science, so this time I kept track of everything so I can share my specialty with all of you!!!

Another great thing about this recipe is that you are making it yourself, so you can tweak it to meet your tastes!

I like it spicy, if you don’t, you can use fewer jalapeños or omit the seeds. I also prefer red onions, you can use white, yellow….whatever your heart desires!!

This recipe makes enough for a party, but don’t be surprised if you end up not wanting to share. My Husband and I always have a test chip (or 10) after we make it, and soon have to seal it up and get it in the fridge so we don’t eat it all ourselves!!!

Our favorite way to enjoy it is with tortilla chips, but it is great for on top of tacos, nachos, or even hamburgers!

A couple of quick tips…

I prefer to use Roma Tomatoes, because I find them easier to cut up, and they have fewer seeds

To finely dice the jalapeños, I slice them and put them in my food processor. This minces them and makes sure you get jalapeño in every bite! This will also work great for the garlic and cilantro leaves.

Lastly, when eating this with tortilla chips, I prefer unsalted. I think that it allows the fresh flavor to shine through!

Fresh Pico De Gallo (spicy)

  • Splash of V8
  • 7 Roma Tomatoes, diced
  • 1 Red Onion (large), diced
  • 4 -6 Jalapeños, minced
  • 5 cloves Garlic, minced
  • Handful of Cilantro Leaves, chopped

Optional Seasonings (to taste):

  • Black Pepper
  • Seasoning Salt
  • Cayenne
  • Cumin
  1. In a large bowl, add a splash of V8.
  2. Add in remaining ingredients and stir. If you prefer, add in optional seasonings to taste.
  3. Enjoy! Remember this is yours, so add in or omit anything you would like!!
