Banana Bread

By now, if you have checked out my Banana Cupcake with Peanut Butter Frosting recipe or my Banana Oatmeal Cookies recipe…you know my love of baking with bananas!

Banana Bread is such a comforting food for me. It reminds me of when I was younger, no old bananas were thrown away in our household!

This recipe requires you to smash your bananas, this can be accomplished in a couple different ways. I recommend a potato masher. However, you could just use a fork. I should mention, you want bananas that are ripe and have brown speckles. Not only does this make it easier to mash them, the flavor comes through so much better.

This banana bread is so moist, and full of bananas! If you were looking for variations, you could add chocolate chips, walnuts, or cranberries. The possibilities are endless!!

Banana Bread

  • 3-4 bananas, mashed
  • 1/3 cup butter, melted
  • 3/4 cup brown sugar
  • 1 egg, room temperature
  • 1 t vanilla
  • 1 t cinnamon
  • 1/4 t nutmeg
  • Pinch of Cloves
  • 1 t baking soda
  • 1 1/2 cup flour
  • Optional: chocolate chips, walnuts, etc.
  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, combine butter and bananas. Add sugar, and mix. Then add egg and vanilla, mix. Lastly, add in the cinnamon, nutmeg, and cloves and mix. Add baking soda and flour, mix just until combined.
  3. Pour batter into a 4 x 8 loaf pan that has been sprayed with Pam or another non-stick spray. Bake for 48-50 minutes, until a toothpick inserted into the center comes out clean. Cool in the pan for about 10 minutes, and then transfer to a wire rack.
